What conversion can't do
PNG can't restore detail the JPG already threw away — compression artifacts that exist now are preserved exactly, not healed. The gain is entirely about the future: no further loss from here on.
Expect a bigger file, too. Lossless storage of a photo costs several times the size of its JPG; that's the trade for editing safety.
