Why the quality doesn't drop
MOV and MP4 are containers — boxes that hold the actual video and audio streams. In most cases the video inside a MOV is already encoded with H.264, which MP4 supports natively, so converting mostly repackages the same streams into a new box rather than re-compressing the picture.
That's why the converted file looks identical to the original and finishes quickly: nothing about the image itself is being degraded.
When to convert (and when not to)
Convert when you need to send a clip to a Windows or Android user, upload it to a site that rejects MOV, or archive footage in the most future-proof format.
If the video only ever lives on your Apple devices, you can leave it as MOV — the formats store the same content, so there's no quality reason to convert until compatibility forces it.
